berryfitness.com: Cajun Chicken Salad with Spiced Yoghurt Dressing

Really tasty and simple recipe . . which is generally what you folks want!! Apologies in advance . . my "video director" got a little happy with the zoom button! haha


Ingredients

Chicken Breast
Cajun Spice

for the salad

Cos Lettuce
Asparagus
Red Onion
Cherry Tomatos

for the spiced yoghurt dressing

Natural Greek Yoghurt
Spice mix (fennel, cumin, corriander or any alternative spices you like!!!)
Lemon Juice
Mint
Salt & Pepper

Method

  • Firstly, Blanche asparagus in boiling, salted water for 3 minutes. Leave to cool.
  • Cut the cherry tomato's in half, season with salt and pepper then lightly grill to sweeten them up. Wash cos lettuce leaves and thinly slice the red onion. Set aside.
  • Toast off your spice mix to release aromas then add along to the yoghurt with a squeeze of lemon and salt and pepper to taste. Finish with chopped mint.
  • "Butterfly" chicken breast then cut into strips, evenly coat with cajun spice mixture.
  • Heat up frying pan with olive oil and pan fry the chicken for a couple of minutes until cooked through.
  • To serve, toss the salad ingredients with a splash of the yoghurt dressing, plate up along side the cajun chicken strips and finish off with a little more spiced yoghurt dressing. ENJOY!

Right people - 1st video - Don't be too harsh on me! I'm certainly no T.V chef but more recipe's to follow!

Ingredients

Porridge Oats - 80-100g
Milk - 200-250ml
Cinnamon stick
Star Anise
Blueberries
Strawberries
Honey
Sunflower Seeds
Pumpkin Seeds

Method

  • Heat up your milk in a saucepan along with the cinnamon and star anise to infuse the flavour.
  • In another pan add the porridge oats and when the milk comes to the boil add gradually to the oats, constantly stirring all the time. Make sure you control the heat so it doesn't stick to the bottom of the pan!
  • Gradually the porridge will start to thicken. Personally I like my porridge "loose" - not runny and not too thick but it's entirely up to you!
  • Once all the milk has been absorbed, serve into a bowl, garnish with strawberries and blueberries (or alternative fruit) sprinkle with crushed pumpkin and sunflower seeds, drizzle with honey. BINGO!
